So we’ll take care of that right now so that our GREAT friends, the Scisciani’s can add this to the dishes they can take and enjoy as they head out to the Outer Banks for a family vacation!
While going through my recipe box for my Cucumber Tomato Salad recipe I stumbled across this favorite! It’s been published by various people over the years in a variety of adaptations, and I have no idea anymore where it originated first, but this is my take on this summer favorite.

Today is the first day of summer and we ushered it in with a steamy 97° here in Virginia. In the heat of summer what is better than a delicious, light and refreshing watermelon salsa? I know that all the salsas were a huge hit at our Memorial Day party and they ran the gamut from traditional tomato based to apple and corn. I found myself telling everyone about watermelon salsa so I thought I better dig out my recipe and get ready for the 4th of July picnic!
