This Summery Salsa Recipe Satisfies Guests!
While going through my recipe box for my Cucumber Tomato Salad recipe I stumbled across this favorite! It’s been published by various people over the years in a variety of adaptations, and I have no idea anymore where it originated first, but this is my take on this summer favorite.
Watermelon Salsa Recipe
Today is the first day of summer and we ushered it in with a steamy 97° here in Virginia. In the heat of summer what is better than a delicious, light and refreshing watermelon salsa? I know that all the salsas were a huge hit at our Memorial Day party and they ran the gamut from traditional tomato based to apple and corn. I found myself telling everyone about watermelon salsa so I thought I better dig out my recipe and get ready for the 4th of July picnic!

I have some amazing friends that are awesome cooks. They also love trying out new recipes. So yesterday when I asked everyone to bring something to share for our annual Memorial Day picnic I knew, as always, we’d have something amazingly delicious and they didn’t disappoint me.
Roasted Chickpeas Make Delicious Snack
The Kitchn posted a recipe today for Roasted Curried Chickpeas with Rosemary and Thyme that sounds really good. I will have to try it out just as soon as my herbs start to freshen up some out in our garden.
I discovered fried chickpeas with alepo pepper and sea salt when visiting one of our favorite wine bars this past summer. I have since adapted to an oven roasted variety and have posted the recipe for that below for you.
Easy and FAST Meatballs
The Chef in Training threw out there a recipe for meatballs that, if you have the ingredients in the house, you can throw together in minutes, not hours. It will not take the place of real, honest to goodness Italian meatballs like I make and share, but they are great in a pinch, or for appetizers. I would never serve them sauceless as she has, but coated with either marinara sauce, sweet and sour glaze or one of the other sauces we mention below. They will be dcvoured in no time!
