Broccoli Rice Casserole

I was going through my recipes this afternoon, snatching out those I need for our Souper Super Bowl party on Sunday and realized that I entirely forgot to make my Broccoli Rice Casserole for Christmas! I am very surprised that it didn’t get questioned because it’s a staple for that meal. I guess the fact that it got forgotten was lost in all the food that WAS on our Christmas buffet!
This is a very simple dish to make but goes a long way and gets a lot of compliments. It compliments ham very well so I might just make it for Easter!
